I love, love, love granola. Granola is so stupid easy to make at home and takes no time at all. The granola I am sharing with you today is pretty unfussy - I love the maple-ly coco-nutty undertones throughout the granola.

Simple is the word best to describe this granola. Golden flax meal, rolled oats, sunflower seeds, triple omega seed mix (my all time favorite product from NOW Foods) and unsweetened shredded coconut- all organic + non GMO.
Oh and maple syrup- in my last post with maple syrup I told you my love for all things pure maple syrup // grade b is the best, no really it is.

12oz Organic Virgin Coconut Oil
24oz Package Organic Rolled Oats
24oz Package Organic Rolled Oats
12oz Package Organic Triple Omega Seed Mix
16oz Grade B Organic Maple Syrup
10oz Package Organic Unsweetened Shredded Coconut

1/4 cup organic golden flax seed meal
1/3 cup organic triple omega seed mix (chia, hemp hearts, flax)
1/2 cup roasted or raw sunflower seeds
1/3 cup Organic Grade B Maple Syrup
1/4 cup organic virgin coconut oil // melted
assembly:
pre heat oven to 200*
In a small sauce pan over medium heat combine maple syrup & coconut oil - heat until coconut oil has melted. Alternatively melt in microwave in 30 second intervals until melted.
Combine oats , flax, seeds, sunflower seeds and coconut in a medium mixing bowl, toss to combine. Pour melted maple syrup and coconut oil mixture over the dry ingredients and stir until all dry ingredients are well coated.
Line a large rimmed baking sheet with parchment paper. Spread granola mixture evenly onto the baking pan. Bake for 30 minutes, stopping to stir the granola at the 20 minute mark.
Remove granola from oven, while the granola is hot from the oven press the granola firmly down into the pan with the back of a spatula. Allow granola to fully cool on the baking sheet. Store in an airtight container - I like to use mason jars but any container will work.
Granola stores well for up to 4 weeks (maybe longer but a batch only lasts us about a week!)
